Abstract

The invention relates to a processing method of crisp chinquapin kernels. According to the method, chinquapin is used as a main raw material, and through working procedures of screening, shelling, rinsing, cooking and curing, freezing, microwave thawing, soaking to enable the chinquapin kernels to be tasteful, vacuum deep-frying, centrifuging for deoiling, skin wrapping, inspecting and the like, the crisp chinquapin kernels are made. The processing method disclosed by the invention has the following characteristics: on one hand, through low-temperature freezing, cell walls and cell membranes in chinquapin kernel tissues are destroyed, penetration of some flavor substances and water is facilitated, steam quickly generated in the microwave thawing course forms many tiny gaps in chinquapin kernels, and the situation that the chinquapin kernels become crisp is facilitated; and on the other hand, through soaking in unique soaking fluid, special flavor is given to the chinquapin kernels. Theoperation of the processing method disclosed by the invention is simple and convenient, equipment investment is low, and industrial automation production is easy to realize.
