The rattan pepper flavored chicken giblet marinating material is prepared from the following components in parts by weight: 0.51-3.37 parts of basic spice, 2.6-9 parts than basic seasoning, 1-5 parts of special rattan pepper spice and 0.1-0.5 part of enzyme. The preparation method comprises the following steps: pre-roasting, namely adding peanut oil into the basic spices in advance, and performing roasting; blending a marinating solution, namely adding the roasted basic spices and peanut oil into water at a certain proportion, and performing cooking for a period of time to prepare primary marinating solution; performing seasoning, namely adding basic seasonings and special-made rattan pepper spices into the marinating solution for seasoning; and performing marination, namely marinating the quick-boiled chicken giblets in the seasoned marinating solution, and adding enzyme for soaking after marinating is finished to obtain the rattan pepper flavored chicken giblets. The chicken giblets marinated by the marinating material has the advantage of low cholesterol content; and in addition, the preparation method has the advantage of improving the flavor of the chicken giblets.
