Abstract

The invention discloses a processing method and product of selenium-rich rapeseed oil. The processing method comprises the following steps: breaking walls of rapeseeds by microwaves through a freeze-thaw method, squeezing out crude oil by adopting a low-temperature squeezing method, and carrying out extraction treatment on rapeseed cakes by utilizing a subcritical method to obtain leached crude oil; and carrying out ultrasonic-assisted phosphoric acid degumming on the crude oil, and then carrying out deacidification, dehydration and decolorization. According to the invention, selenium-rich rapeseed is adopted, and a variable-temperature freezing wall-breaking process is adopted, so that the oil yield of rapeseeds and the selenium content in rapeseed oil are improved; flavor and nutrient substances of the rapeseed oil are better retained by adopting the low-temperature squeezing method and the subcritical extraction method; and ultrasonic-assisted phosphoric acid degumming is adopted, so that degumming efficiency is high, and degumming time is greatly shortened.
