The invention discloses a new quantitative aflatoxin distinguishing method, which comprises the following steps of: detecting values of certain chemical constituents in stored food in real time within a detection period by adopting a conventional instrument, so as to obtain related information of the quality change of the stored food and the real-time process of the change of aflatoxin B1 according to the values, dividing the change process of the aflatoxin B1 into a plurality of levels by taking the change trend and the change degree of the quantitative values of the chemical constituents as the distinguishing basis, determining early-warning indexes according to the levels, sending early-warning signals of the stored food, and regulating and controlling a storage environment and storage conditions in real time. According to the method, the early-warning signals are sent according to the real-time change of the related chemical constituents, the food storage environment and the food storage conditions are regulated in time at the early stage of generation of the aflatoxin, the safety of the stored food is guaranteed, and the loss caused by poisons generated by mildew is reduced. The method has the advantages of being simple, high in operability, and capable of detecting in real time, visual in judgment and timely in early warning.
