Astaxanthin /æstəˈzænθɪn/ is a keto-carotenoid. It belongs to a larger class of chemical compounds known as terpenes (as a tetraterpenoid) built from five carbon precursors, isopentenyl diphosphate, and dimethylallyl diphosphate. Astaxanthin is classified as a xanthophyll (originally derived from a word meaning "yellow leaves" since yellow plant leaf pigments were the first recognized of the xanthophyll family of carotenoids), but currently employed to describe carotenoid compounds that have oxygen-containing components, hydroxyl (-OH) or ketone (C=O), such as zeaxanthin and canthaxanthin. Indeed, astaxanthin is a metabolite of zeaxanthin and/or canthaxanthin, containing both hydroxyl and ketone functional groups.

The invention provides an extraction method of astaxanthin. The extraction method comprises following steps: shrimp shell processed via acid refining is subjected to filtering impurity removing, pH value of an obtained filtrate is adjusted to 5, and an electrodialyser desalination water tank is used for seven-grade ion exchange membrane electrodialyser desalination; pH value of a crude shrimp shell immersed water obtained via electrodialysis is adjusted to 7, and the crude shrimp shell immersed water is pumped into a constant pressure filtering machine filled with diatomite for filtering impurity removing; after impurity removing, shrimp shell is pumped into a reverse osmosis device composed of 20 sets of reverse osmosis composite membrane for concentration; and an astaxanthin product is obtained via decoloration, evaporation and concentration, crystallization, and drying. Compared with the prior art, the extraction method comprises following advantages: operation is convenient, industrialized production is easy to realize, filter aid constant pressure filtering of the shrimp shell obtained via electrodialysis desalination is carried out so as to remove a large amount of impurities, the concentration of astaxanthin in the original shrimp shell can be increased by three times or higher via reverse osmosis membrane concentration, and product yield and purity are high.
