Abstract

The invention relates to a preparation method of wild jujube leaf tea. The method comprises the following steps: (1) freeze-drying fresh wild jujube leaves until the water content is 15-20%; (2) putting the dried wild jujube leaves into steam explosion equipment, introducing steam mixed gas until the pressure reaches 1.2-1.5 MPa, and keeping the pressure for 120-300s; (3) carrying out instantaneous ejection steam explosion to obtain exploded wild jujube leaves and an explosion liquid; and (4) uniformly mixing the explosion liquid with the wild jujube leaves, and performing drying to obtain thewild jujube leaf tea. According to the tea soup of the wild jujube leaf tea, the content of total saponins is 88% higher than that of wild jujube leaves, and the content of total flavonoids is 99% higher than that of the wild jujube leaves.
