Abstract

The present invention discloses freeze-dried strawberries and a processing technology thereof, and belongs to the technical field of the freeze-dried strawberries. The freeze-dried strawberries comprise the following raw materials in parts by mass: 40-60 parts of strawberries; 5 to 15 parts of white granulated sugar; 10 to 20 parts of whole milk powder; 3 to 8 parts of cocoa butter; and 3-8 partsof essence. According to the freeze-dried strawberries and the processing technology thereof, after the strawberries uniform in size are selected through screening equipment, the strawberries are cleaned and sterilized; the strawberries are placed in a quick-freezing warehouse to be quickly frozen; the strawberries are subjected to vacuum drying through a drying bin, so that the strawberries havethe proper water content; after the strawberries are freeze-dried, the freeze-dried strawberries are sorted by sorting equipment according to the water content; and the qualified freeze-dried strawberries are packaged by packaging equipment, so that the freeze-dried strawberries prepared by the processing technology are uniform in size and qualified in water content, and the shelf life of the freeze-dried strawberries is greatly prolonged.
