Abstract

The invention discloses a simple and convenient identification method of bacillus cereus for konjac glucomannan, which comprises the following steps: step 1, sample preparation: weighing a konjac glucomannan raw material sample under a sterile condition, adding normal saline, and stirring for dissolving; step 2, pre-screening targeted bacteria: putting the solution prepared in the step 1 into a constant-temperature furnace for heating and pre-cooking, and after the temperature is raised to 88-92 DEG C, carrying out heat preservation and pre-screening to obtain spore bacteria; step 3, sterile inoculation: sucking the solution pretreated in the step 2 into a sterile culture dish, adding a compound culture medium solution, and rotating the culture dish to uniformly mix; step 4, culturing: after the agar is solidified, turning over the plates, and culturing at 36 +/-1 DEG C for 48 +/-2 hours; and step 5, identifying, wherein cultured test colonies show colonies in the shape of snowflake or plum blossom. By means of the method, the raw materials containing the bacillus cereus and possibly having risks can be screened out in time within the shortest time, and the safety of jelly food is improved.
