The invention relates to a method for extracting unsaturated fatty acids from eucalyptus leaves. An organic solvent is used for extraction. Unsaturated fatty acid crude extracts are obtained by low-temperature crystallization treatment after dissolution, and more than 7 percent of unsaturated fatty acid component is obtained by CO2 critical extraction. The extraction method is simple, convenient, low in cost, stable in process and high in extraction efficiency. The unsaturated fatty acids in the eucalyptus leaves cotain polyunsaturated fatty acids such as linoleic acids and linolenic acids, are natural extracts, have the effects of resisting bacteria, resisting oxidation, depressing blood fat, lowering cholesterol, improving memory, suppressing tumors and the like, and can be widely applied to the fields of feeds, cosmetics, foods, biochemical engineering, even medicine and the like.
