Embodiment 1

[0030] The preparation method of probiotic milk powder comprises the following steps:

[0031] (1) Treatment of raw milk: Raw milk (cow's milk) is sterilized at 135°C for 1 to 2 seconds; then, it is concentrated under reduced pressure in a vacuum concentration tank, and the vacuum degree is kept at 15.67×10 3 Pa, the temperature is maintained at 51°C, and concentrated milk is obtained after concentration.

[0032] (2) Bacterial culture: Inoculate 3ml of probiotics (Streptococcus thermophilic lactis) into 300ml of fresh milk sterilized at 115°C for 10 minutes, and culture at a constant temperature of 37°C until curdling.

[0033] (3) Centrifuge the obtained curd at 4°C and 6000r / min for 10 minutes to collect probiotic cells;

[0034] Add the obtained probiotic bacterium culture to concentrated milk in an amount of 4% by mass fraction, and add a protective agent to make it include leucine, vitamin B 12 The mass concentrations of glutamic acid and glutamic acid are: leucine 0.01

Embodiment 2

[0038] The preparation method of probiotic milk powder comprises the following steps:

[0039] (1) Treatment of raw milk: The raw milk is subjected to ultra-high temperature instantaneous sterilization at 120°C for 1-2 seconds; then, it is immediately concentrated under reduced pressure in a vacuum concentration tank, and the vacuum degree is kept at 16.00×10 3 Pa, the temperature is maintained at 53°C, concentrated milk is obtained after concentration, and the milk solids content is 40-50%.

[0040] (2) Cultivation of bacteria: First prepare the enrichment medium, dissolve 10g of whey powder, 5g of yeast extract powder, 25g of corn starch, and 180g of cucumber extract in 1000ml of distilled water, mix well, and sterilize at 115°C. Bacteria 20min;

[0041] Inoculate 10ml of probiotic strains (Streptococcus thermophilic lactis and Lactobacillus bulgaricus, mixed at a volume ratio of 1:1) into the above-mentioned enrichment medium, and culture at a constant temperature of 38°C for

Embodiment 3

[0046] The preparation method of probiotic milk powder comprises the following steps:

[0047] (1) Treatment of raw milk: The raw milk is subjected to ultra-high temperature instantaneous sterilization at 150°C for 1 to 2 seconds; then, it is immediately concentrated under reduced pressure in a vacuum concentration tank, and the vacuum degree is kept at 15.45×10 3 Pa, the temperature is maintained at 55°C, concentrated milk is obtained after concentration, and the milk solids content is 40-50%.

[0048] (2) Cultivation of bacteria: first prepare the enrichment medium, dissolve 10g of whey powder, 5g of yeast extract powder, 25g of corn starch, 100g of white radish extract and carrot extract in 1000ml of distilled water, and mix well , sterilized at 115°C for 20 minutes;

[0049] Inoculate 10ml of probiotic strains (Lactobacillus bulgaricus) into the above-mentioned enrichment medium, and incubate at a constant temperature of 37°C for 48 hours. After obtaining the bacterial cultu

Abstract

The invention discloses a preparation method of probiotics milk powder. The preparation method comprises the following steps: 1), raw milk treatment: carrying out an ultra-temperature instant sterilization treatment to on the raw milk and then carrying out vacuum depression concentration to obtain concentrated milk; 2), bacteria cultivation: inoculating probiotics to sterilized fresh milk or enrichment medium to obtain a bacteria nutrient solution, wherein the volume of the inoculated probiotics is 1-3% of the volume of the bacteria nutrient solution; 3), homogenization: adding 1-10% of bacteria culture in percentage by weightmass fraction to the concentrated milk in the step 1) for homogenizing to obtain a concentrated milk mixture containing probiotics; and 4), spraying and drying the concentrated milk mixture containing the probiotics to obtain the milk powder containing probiotics. The preparation method disclosed by the invention has a simple operation process, low device requirements, saves cost and is suitable for large-scale production. The probiotics milk powder prepared from by the preparation method provided by the invention has all nutrition of common milk powder, and further has health benefits of various probiotics.
